How To Make AFL Themed Cupcakes

Looking for something to keep the kids entertained during these school holidays? Well, we’ve got just the thing for you. How do you like the sound of some AFL themed cupcakes? Keep your kids busy these school holidays with these delicious chocolate and raspberry AFL themed cupcakes. With footy finals just around the corner, now’s the perfect opportunity to whip out the ingredients and get cooking with your little chefs.

Whether you are hosting a virtual Grand Final party or just settling for a quiet BBQ with the family at home, these cupcakes are the perfect half-time snack.

It doesn’t matter if your team isn't even in the finals, there’s no reason why you can’t still make these cupcakes! Any excuse for cake, right? 

Oh, and most importantly, don’t forget to share your culinary creations on the socials! Your friends will be nominating you for the next season of MasterChef when they see these little beauties! 

So, here is our recipe for some delicious chocolate and raspberry muffins for you to bake during these school holidays. The kids will be entertained for hours when they help you whip these up. 

Chocolate & Raspberry Muffins

(Makes 12 muffins)

1 cup self-raising flour, sifted

¼ cup cocoa powder, sifted

¾ cup caster sugar

¾ cup milk

1 egg, lightly whisked

55 grams butter, melted

1 teaspoon vanilla essence

¾ cup frozen raspberries

Vanilla Icing -

125g butter, at room temperature

1 ½ cups of icing sugar, sifted

1 teaspoon vanilla essence

1 tablespoon milk

Method -

  1. Preheat the oven to 180 degrees fan forced. 
  2. Grease or line a muffin tin with patty pans and set aside.
  3. Sift together the self-raising flour and cocoa powder into a large mixing bowl.
  4. Add the caster sugar, vanilla essence, melted butter and mix with an electric mixer. Gradually add the lightly whisked egg, milk and the frozen raspberries. 
  5. Continue mixing until all ingredients are combined. 
  6. Once the mixture has combined, spoon evenly into the muffin tin. 
  7. Bake muffins for approximately 12-15 minutes or until tested with a cake skewer. 
  8. Once cooked, turn muffins out onto a cooling rack.

Vanilla Icing -

  1. Once the butter has softened, place into a mixing bowl and mix with an electric mix until the butter has become pale. 
  2. Gradually add the sifted icing sugar, vanilla essence and milk until the icing has become thick and creamy.
  3. Once the cupcakes have completely cooled, pipe or spoon the vanilla icing onto the cupcakes and top with your favourite AFL team’s edible icing.
